Hyatt serves up tasty Aussie treats

You have not eaten chicken until you have feasted on Angostura Chicken. This  delicious delicacy was a talking point last Monday evening when the Hyatt Regency Trinidad hosted the Australia Food Night at its Waterfront Restaurant in Port-of-Spain. Thinly sliced, the chicken is cooked slowly on an open grill and infused with Agostura rum, and is served with a papaya chutney. On hand to welcome guests were Hyatt CEO Russell George and hotel executives Candy Montano and Neemah Persad-Celestine. They seized the opportunity to introduce new chef Egyptian Emad Adam. As far as the delights from Down Under are concerned, the most original was the Aussie Burger made of Angus beef, and topped with a fried egg and beetroot. On eating one of these gastronomic treats there’s precious little room to eat anything further. 
 
Monday’s menu also comprised a wide array of appetizers, grilled shrimp and pork, and desserts that included a scrumptious Apple Crumble, fresh fruit and addictive Fruit Pavlova. Seen at the Hyatt was former Jamaica prime minister PJ Patterson, in town to attend the launch of a book written by then acting prime minister Winston Dookeran. On Monday night, the restaurant was filled to capacity with Australian diners, in town for this week’s second Digicel Test match between Australia and the West Indies. The Hyatt is pulling out all the stops on May 10 when it  premieres a Brazilian Food Festival, scheduled to run for a week.
